Born and raised in Texas with a lifelong passion for science and nature, Matt's love of the water brought him to the “sparkling city by the sea”. A short 3 year stent in NY with his wife opened their eyes to oysters and sparked the dream. Once back in Texas, and with careers in medicine underway, they began to put the pieces together to make a dream a reality. A pandemic helped fan the flames of throwing caution to the wind and a friendship with like-minded adventurers helped turn their dream of growing the best tasting Texas oysters into a reality!

Bertie hails from Live Oak County, Texas, raised on hard work and long days. Before oyster farming, he was a golf course superintendent, managing land and water and learning the value of discipline, timing, and doing things right when no one’s watching. Bertie was at a crossroads in his career when his brother called and asked if he wanted to start an oyster farm. He didn’t overthink it. Three weeks later, Bertie was back in Texas, all in, learning the bay and building the operation from the ground up. In his own words, Bertie will be the first to tell you, "This farm is about grit, stewardship, and pride in Texas waters. We’re here to grow great oysters, take care of the bay, and build something that lasts."

Anthony was raised in the Dallas–Fort Worth area where he built his career in emergency medicine, first as a paramedic, and for the past 16 years as an Emergency Department RN. Now, he turns his focus to a new passion: oyster farming. Bringing the same work ethic, discipline, and dedication that shaped his career, his mission is to produce the world’s best oysters. Alongside his buddies at Third Coast Oysters, he shares the same passion for quality, stewardship, and doing things the right way. Together, they are committed to raising exceptional oysters with patience, precision, and pride. This is a long-term commitment to building something truly exceptional in the Texas Gulf Coast!
