THE PROCESS

At Third Coast Oysters, we're serious about the oysters we raise. That's why we've taken the time to develop a process to ensure that the oysters that reach your table are the highest possible quality. You deserve the best, so the best is what we deliver.

STEP 1: The Seeds

Our oyster seeds are sourced from proven genetics, and selectively bred to produce a heartier, healthier, and better oyster. Our farm specializes in the Eastern Oyster (Crassostrea virginica), Texas' native species, and we grow both diploid and triploid varieties.

Step 2: The Planting

While wild oysters typically grow on the seafloor, we plant our seed oysters on top of the water table in floating bags. This allows them access to more nutritional waters provided by the tides, and decreases the time needed to reach market size.

STEP 3: The Sorting

Working our oysters is one of the most important parts of our process. By sorting regularly, we're able to make sure our oysters stay healthy, and ensure each bag is spacious enough to prevent overcrowding as they grow. While we do use an oyster tumbler to help us sort by size, we fill each bag by hand on purpose. This lets us effectively put hands on every oyster in order to make sure they're thriving before we place them back on the farm.
